Toss tofu, vegetables, and herbs in a large bowl. Add a few shakes of peanut sauce and gently toss.
Fill a large bowl with warm water, then submerge one rice paper wrapper for 15 seconds. Lay wrapper flat on a cutting board, then fills with a scoop of noodles, tofu, and vegetables. Next, fold up wrapper like an open envelope and roll the rest of the way.
If you like it extra saucy, dip in peanut sauce and enjoy!
