  • Package of Bgreenfood vermicelli noodles
  • Package of Blue Dragon rice spring roll wrappers
  • Package of firm tofu, pressed and drained
  • 1/2 cabbage, diced
  • 1 carrot, grated
  • 1 green onion, chopped
  • 1/4 cup cilantro, chopped
  • Organic peanut sauce


  1. Coat tofu in peanut sauce then bakes at 350 degrees for 20 minutes. Cut into cubes.
  2. Toss tofu, vegetables, and herbs in a large bowl. Add a few shakes of peanut sauce and gently toss.

  3. Cook vermicelli noodles according to package instructions

  4. Fill a large bowl with warm water, then submerge one rice paper wrapper for 15 seconds. Lay wrapper flat on a cutting board, then fills with a scoop of noodles, tofu, and vegetables. Next, fold up wrapper like an open envelope and roll the rest of the way.

  5. If you like it extra saucy, dip in peanut sauce and enjoy!
